If you own or operate a restaurant, then you know what a grease trap is. It is used to separate the fats, oils, grease and other solids from the rest of the wastewater. Per New Jersey law, all restaurants must not only use a grease trap, but they must clean it regularly. If a grease trap is not used, then all of the fats, oils, grease and other food solids will build up inside the many drain lines and cause backups and other problems. If a grease trap is used, but not cleaned and pumped on a regular basis, then it will not operate how it is supposed to, causing blockages and backups that eventually lead to overflows and bad odors throughout the restaurant.

Grease traps should generally be cleaned every one to three months, or as needed. In the industry, we recommend the “1/4 Rule”, meaning it’s time to clean your grease trap when it reaches 1/4 of the trap capacity. It grease and other solids accumulate to more than 1/4 of the trap capacity, then the grease trap no longer operates as it should and grease, oils, fats and other food solids will start flowing into the main drainage lines. If you need to clean out your grease trap more than once a month, you may want to consider a larger grease trap with a higher capacity.
